Wacky Cake

Necessity is the mother of invention and, during the early 20th Century, folks were often short of basic supplies for many reasons. This cake uses no milk and no eggs and yet is still super delicious and moist. One of the easiest deserts you’ve ever made!

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup white sugar
  • 4 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon cider vinegar
  • 6 tablespoons vegetable oil
  • 1 cup water
  • 1/2 cup chocolate chips
  • 1/4 cup powdered sugar

Preheat oven to 350 degrees F (175 degrees C).

Mix flour, sugar, salt, soda, and cocoa together into an 8×8 inch ungreased cake pan. Make three holes in the dry ingredients. Pour oil into one spot, vinegar into second, and vanilla into third divit. Pour water over everything, and stir very well with a fork.

Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Dust with the powdered sugar.

Makes about 9 good servings.
