Salmon Florentine

Looking tasty already! Bright spinach, red onions, and a variety of mushrooms

Simple to make and so very very delicious, Salmon Florentine has been one of our favorites for years. Make it fancy by simply using better quality or unusual mushrooms!

Ingredients

For each pound of salmon

  • 1/2 cup (we prefer red) onion
  • 3(+) garlic cloves
  • 1 bag of spinach (at least 6 oz – use more than you need, it will cook down)
  • 1 cup mushrooms chunked (We used a combo of Portabello and Enoki)
  • 1/4 cup white wine
  • 1/2 cup cream
  • Salt and red pepper flakes to taste

Instructions

Pour some of that white wine in a glass…

Preheat the oven to 425 and line a small rimmed baking sheet with parchment paper.

Rub and Season salmon with oil, salt & pepper and place skin down in baking sheet.

Bake for 13-18 minutes, depends on the size and thickness of your salmon piece, but cook till done…! 🙂

Heat up some oil a large pan over medium heat and saute diced onion until transparent.

Add mushrooms, garlic, and spinach. Cover and let the spinach cook down, stirring occasionally.

Drain or cook off (without lid) most liquid from the spinach and mushrooms

Add white wine and simmer for a 2 minutes

Add heavy whipping cream and season with salt and red pepper flakes. Stir and cook for a few minutes.

Add spinach and mushroom mixture to the cooked salmon.
