Pumpkin Sage Gnocchi

It’s hard to beat the satisfying feeling after a plate of too much gnocchi. This Pumpkin Sage Gnocchi has those delicious fall flavors and seems like a special occasion recipe, but is actually very simple to make!
Pumpkin Sauce Ingredients
- 1 tbsp olive oil
- 4 tbsp sage, thinly sliced into strips (you really can’t over do this…)
- 2-4 cloves garlic to taste
- 2 tbsp shallots, minced
- 1 cup whole milk
- 1 cup pumpkin puree
- ½ cup chicken stock (we use Better than Bullion)
- salt and pepper to taste
- ¼ cup Parmesan cheese, grated
- ¼ cup chopped parsley
plus servings of gnocchi enough for 4
(we went with a package of gnocchi here… 5 min work vs. an hour is not even a question… 😉
Instructions
Heat olive oil in a large saute pan over medium heat. Add sage leaves and fry until fragrant and lightly golden in color. Add the garlic and shallots and cook for about 2 minutes until tender – but not browned.
Add in milk, pumpkin puree, chicken stock, salt, and pepper, whisk to combine. Stir and simmer for about 5 to 7 minutes, until mixture is thickened.
Add Parmesan cheese and whisk to combine.
Keep warm over low heat as you cook the gnocchi.
Bring a medium-sized pot of salted water to a boil. Cook gnocchi until they float to the surface.
Drain and toss cooked gnocchi into the pumpkin sauce. Top with a little bit of pepper, grated Parmesan cheese, and chopped parsley.
