Kale and Potato Soup with Spicy Sausage

One of our favorite soups for cold days is our Kale and Potato Soup with Spicy Sausage. One part comfort food, one part healthy eating, mix till delicious!

Ingredients

  • 2 teaspoons olive oil
  • 1 yellow onion
  • 1 stalk celery
  • 2 cloves garlic
  • 6 cups chicken broth (or veg. if preferred)
  • 1 pound potatoes (chunked)
  • 1 bunch of kale (chopped)
  • Spices (thyme, fennel, salt/pepper, red pepper flakes, etc. You can play with the spices a lot.)
  • 1/2 lb. hot sausage (you could omit for a delicious veg. soup if preferred!)
  • 1/2 cup cream (optional, we did not use. You can also use 1/3 cup yogurt.)

Add olive oil to a large soup pot over medium heat. Add in the onion, celery, and dried spices and cook until vegetables have softened.

Add the garlic, salt, and any fresh spices, and cook, stirring, for another minute then add the broth and potatoes.

Increase heat to medium high and bring to a boil – then reduce heat and simmer until potatoes are tender (~20 min)

Meanwhile, brown the sausage. Once the sausage has browned, get rid of most of the grease and transfer into the soup pot. (omit for veg.)

After the 20 min are up, stir in the kale and let simmer, uncovered until the kale is tender. (~10 min)

Serve with dipping bread!
